Foie gras is good for you!

“The Gers, Haute-Garonne and neighbouring départements are major consumers of duck fat, foie gras and confit, and boast some of the lowest coronary mortality rates (cardiovascular disease) in France, as well as the best life expectancy. (Renaud, de Lorgeril, 1994, in “Le Régime santé” by Serge Renaud, published by Odile Jacob).

This is what American researchers and Dr Serge Renaud – a specialist in the subject – have called the French paradox.

Foie gras is rich in unsaturated fatty acids. Their consumption is recommended in our diet, as they lower bad cholesterol levels in the blood.

A quality that could explain the exceptional longevity of the inhabitants of the South-West.
Lipid composition Goose fat Olive oil Butter
Saturated fatty acids 27% 17% 52%
Monounsaturated fatty acids 57% 65% 23%
Polyunsaturated fatty acids 12% 13% 2%

Breeders pay constant attention to the good health of their geese and ducks, throughout their stay on the farm.
During the force-feeding period, in particular, they pay close attention to the fattening of the animals.
The act of force-feeding itself is carried out with great care. The gestures performed by the breeders are safe gestures, acquired through experience. Every day, the breeder acts as a true professional. It also relies on external partners to provide the best technical and veterinary advice.

The many scientific studies carried out do not allow us to attribute any direct consequences to force-feeding on the behavior of ducks or geese. According to our findings, force-feeding under normal conditions does not cause the animals any stress or pain.
