To slice foie gras

Use a thin-bladed knife or a lyre. Soak in very hot water and wipe dry between each cut.

To unmould a jar of foie gras

Turn the jar upside down under the tap of boiling water for 3 to 5 seconds. Poser aussitôt sur la planche à découper. If it’s a can, also run under boiling water quickly, then open both sides and keep one of the lids for pushing.
